I've been thinking about how to start the food section of this blog and I thought I'd start with one of my favorite recipes: oatmeal cookies. All the ingredients I use are natural and unprocessed, so I guess that's the beauty of not buying them ready-made at the supermarket, right? Here goes...
Ingredients:
- 6 tablespoons of peanut butter.
- 1 cup of panela (or brown sugar).
- 1 spoonful of honey.
- 2 eggs.
- 1 teaspoon of vanilla extract
- 1 cup of flour.
- 1 teaspoon of yeast.
- 1/4 cup of pure cocoa.
- 1 1/2 cups of oats.
- 3/4 cup dark chocolate chips.
- 1/2 cup of crushed nuts.
Directions:
In a bowl combine peanut butter, panela and honey. Mix until creamy. Add eggs and vanilla extract and mix again. In another bowl mix the flour, yeast and cocoa. Add the dry ingredients to the wet ones and mix until it is homogeneous. Add the oats, nuts and chocolate chips and mix again. Preheat the oven to 375ºF. Prepare a baking tray with baking paper and place portions of dough on it. Bake for 10 to 15 minutes and let cool. Ready!
